The Traces
The book compiles the proceedings of the symposium held on November 20 and 21, 2022, on the sidelines of the Francophonie Summit. Organised in partnership with the Djerba Cultural Center by a research group under the auspices of the Tunisian Academy of Sciences, Letters, and Arts, ‘’Beit al -Hikma’’, the symposium focused on Mediterranean and Muslim food studies and cultures.
The Tunisian food heritage is explored and understood through its richness, characterised by cross-religious influences as well as the legacies and cultural blending resulting from the intermingling of cultures and the coexistence of Muslims, Jews, and Christians throughout Tunisia’s history.
Rooted in traditional knowledge and practices, food heritage reflects a symbolic system, traditions, tastes, and culinary experiences unique to a society. It allows its members to identify with it and shape a common food legacy.
